White Chocolate Pumpkin Bars

It’s pumpkin time and because of my love for almost everything pumpkin flavored, I created this delicious white chocolate pumpkin bar recipe.

It is a cross between a chewy cookie bar and a dense sweetbread. To make it even sweeter, you can add a cream cheese frosting or drizzle with a cinnamon icing made from powdered sugar, water, and ground cinnamon.

Or, you can do as I did and eat them straight from the oven!

Equipment

  • 8×8 baking dish

Ingredients  

  • 1 cup flour
  • 1/2 cup self rising flour
  • 1/2 tsp baking powder
  • 1 tsp cinnamon
  • 1 egg
  • 1/3 cup vegetable oil
  • 1/2 cup sugar
  • 1/4 cup brown sugar packed
  • 1 cup pumpkin puree canned
  • 1 cup white chocolate chips

Instructions 

  • Preheat oven to 350 degrees.
  • Line 8×8 baking dish with no-stick foil.
  • Into bowl of a stand mixer, add: egg, oil, and sugars.
  • Mix on medium speed until combined.
  • Add pumpkin and mix well, scraping down sides if needed.
  • Add flours, baking powder, and cinnamon. Mix well and scrape if needed.
  • Add chips and mix until combined.
  • Pour into prepared dish.
  • Bake for 50 to 55 minutes, until center is baked through.
